A-Z CURRY - The Balti

Balti is more a style of cooking than one particular curry. The word balti can be translated as "bucket" (i.e. a cooking pan) and some say the style of cooking is indigenous to an area of northern Pakistan known as Baltistan. Further information on the origins of balti can be found on The Balti Pages. A balti pan is basically a karahi which has the shape of a Chinese wok but with 2 small round handles on either side of the pan instead of one long handle. In specialist "Balti Houses" the balti is a meal in itself which contains both meat and vegetables and is eaten straight from the karahi using curled up pieces of nan bread. In standard Indian restaurants the balti is more of a stir-fried curry containing plenty of fried green peppers and fresh coriander (cilantro). Medium hot.

Bamboo Shoots

Bamboo is one of the most versatile and widely used plants, being used for purposes as diverse as house and bridge building to cups, hats, baskets and even food.

Part of the Gramineae, or grass, family, there are about 480 species of bamboo in all. The young shoots are sliced and used in Oriental cooking.

The shoots are a good source of magnesium, which is necessary in the development of bones and teeth and producing chemical energy in body cells.


BALTI ORIGIN

Balti cuisine became known throughout the UK during the 1990s, after initial growth in Birmingham takeaways since the 1980s.

The term 'balti' refers to the steel or iron pot in which the food is cooked or served, taken from the word 'balti', which is derived from the Portuguese word 'balde', meaning bucket or pail, which was taken to India by the Portuguese on their seafaring enterprises in late fifteenth century.

Therefore, originally, the word 'Balti' refers to a bucket, then evolving to its meaning as a cooking pot.

PALM OIL

A native of West Africa, the history of the use of this particularly rich source of edible vegetable oil can be traced back over 5,000 years to the days of the Egyptian Pharaohs.

It is a very productive plant and every part can be used in a wide variety of products, earning it the title, ‘Gift from God’ in almost every country where it is grown. The palm fronds and fibres are used in the manufacture of medium density fibreboards, chipboard, paper, matting and mattress fibre, and of course the wood from the trunks can be made into furniture. There is the obvious culinary use of the oil, as well as for the manufacture of polymers, cosmetics, pharmaceuticals, soaps and detergents, and crude palm oil can even be used as a fuel to run cars fitted with modified (Elsbett) engines.

Spring rolls is an umbrella term used in Western culture to describe disparate varieties of filled, rolled appetizers similar to the Chinese chun-juan (??, lit. "spring roll"), from which the term was derived. East and Southeast Asian cuisine foods referred by the term have different names depending on their country of origin, as well as the type of wrapper, fillings, and cooking techniques from which they are made.

They are commonly eaten in many Asian countries, most notably China, Vietnam, Singapore, Indonesia and Cambodia.
