The Shish Kebab is originally an Iranian fast food delicacy. The term Shish Kebab comes from the Turkish for ‘Skewered Grilled Meat’. In Greece and Turkey a Shish Kebab is called a Souvlaki.

The dish is thought to have originated when the Medieval Turkish soldiers used their swords as a skewer to cook the meat over an open fire.

The typical Shish Kebab will be made from of cubes of chicken, lamb or other meat which are placed onto a skewer and then either grilled or roasted. It’s common to add a selection of vegetables, and the Shish kebab is one that can be easily customised to produce a healthier version of the meal.

Indian is one of our favourite fast foods from takeaways, in the United Kingdom we each eat (on average) around 2.2 curries per week – costing us a total of £2.8 billion per year.

Indian takeawayss are good employers too. In the UK they employ more people than steel, mining and shipbuilding industries put together. You might wonder why if you eat at an Indian restaurant abroad, they don’t know what your favourite curry is. That’s because most of the dishes on UK Indian menus are specific just to the UK. Many of the names for popular UK dishes were created by the people who introduced Indian restaurants to Britain.

It might also surprise you to learn that the recipe for a Chicken Tikka Masala is different in nearly every Indian takeaway!






Pasanda

Derived from a court dish of the Moghul emperors the pasanda is traditionally made with thinly sliced and marinated lamb fillets.

It is sometimes called lamb badam pasanda because the dish contains ground almonds, the "badam" of the title.

The restaurant pasanda is usually quite mild and contains ground almonds, cardamon pods, puréed tomatoes and cream.

Patia

Like it's more famous cousin, dhansak, patia is a Parsee dish. A traditional Parsee patia is made with fish cooked in a dark vinegar sauce.

The restaurant patia is hot, sweet and sour in equal measure. The restaurant patia grew popular as a starter using prawns ( shrimps) as the main ingredient.

Many restaurants now offer the patia as a main course as well and give you the choice of a prawn, chicken or lamb version. It is usually garnished with fried tomato pieces.


Rogan josh

Rogan josh is another all time favourite on the curry house menu. It was originally a Kashmiri dish but is equally at home in the Punjab. An authentic rogan josh will be made with lamb and may, at its most elaborate, contain dozens of spices.

The Kashmiri and Punjabi versions do differ (the Kashmiri does not traditionally contain onions or garlic) but they are both highly spiced and share a deep red colour derived from the liberal use of dried red Kashmiri chillies. The curry house rogan is also red but the colour comes from red peppers and tomatoes rather than Kashmiri chillies. The restaurant rogan is characterised by its garnish of tomato pieces and fresh coriander. It is usually medium hot.

Just-Eat is an online takeaway ordering service. The website enables users to enter their postcode and search through a list of delivery restaurants that can deliver to that postcode catchment area. Customers can view the restaurant’s menu, add items to an order basket and pay for their order via debit/credit card online or cash when the delivery arrives. A review system and ratings aggregator provides customers with the ability to leave positive/negative reviews for individual restaurants and read other customer reviews.
